The Houston Livestock Show and Rodeo is one of the biggest events in Texas. With over 2.5 million visitors a year, it's the perfect place for carnival concessionaires to perfect their offerings. Host Noah Cappe gets a lesson in the meat that makes Texas famous, sampling the Texas Chili Burger and the Big Texas Barbecue Baked Potato. Then he tries a local legend's tamale recipe before rounding off the day with Strawberry Waffle Bombs. Next, he arrives at Lemonade Days in Dunwoody, Georgia to discover a new breakfast concept called Rise & Shine Pizza. A Sushi Burrito is an East-West fusion food that tickles his taste buds while The Funnel Cake Dog proves that even the wackiest carnival concoctions can be a success.

Young squire Noah Cappe tries his hand at making the King's Court Conch Fritters, decadent Deep Fried Peanut Butter and Jelly Brownie Bites, a picquant Fried Green Tomato BLT and the Cookies and Cream Sandwich. Biding adieu to his new friends, Noah heads west to Mercedes, Texas where the rough and ready cowboys and girls at the Livestock Show rustle up some western grub like Deep Fried Cheesesteak, Outlaw Fries and the enormous Suicide Taco that's so huge you need two plates and four hands to hold it.

Host Noah Cappe is off to the races in Louisville Kentucky at the Kentucky Derby Festival. First he chows down on a custom made pizza - the Kentucky Hot Brown. Then it's time to get a little bit country with Ozark Style Loaded Fries, piled high with pork, baked beans and cheddar cheese. Ending the day are two sweet treats: Festive Funnel Cake made with pumpkin and Kentucky's Fried Cookie Dough. Next he heads to Beaumont Texas for the South Texas State Fair where local specialties are The Swamp Thing and Hush Kitties.

Noah Cappe begins his journey at the Royal Winter Fair in Toronto, Canada, where the Blue Balsamic has Noah saying "yes, cheese" while The Mean Green is pretty nice! He tries on The Great Canadian Rosti, and tops it all off with the Massive Marshmallow Crunch. Later, he makes his way down to the State Fair of Louisiana, where the specialties include Lupita's Gorditas and The Five Pounder burger. He ends his culinary adventure with the sweet Not Yo' Average Nachos.

At the spectacular Magical Winter Lights in Houston, two very bright vendors turn Noah Cappe on to fusion favorites The Torthai and The Koagie Dog. Then Noah tries his hand at making a Deep Fried Root Beer Float and torches a Berry Brulee Waffle. Next, he snacks to the future at Dickens on the Strand in Galveston, Texas, donning some Victorian finery for a trip back to Dickensian England. On the menu are Fagin's Fried Shrimp, Scotch Eggs and Deep Fried Baklava.

The South Florida Fair in West Palm Beach is one of the first events of the calendar year, and our vendors start the season off right with whacky takes on some fairground classics, with The Waffle Burger and the Donut Philly Cheesesteak. 'Zanado Fries and a S'mores Cobbler round off the day. Then Noah Cappe heads west to the National Western Stock Show and Rodeo in Denver, where he gets down with The F Bomb. The Uber-Tater is the ultimate in comfort food, while the Icy Apple Dream sends Noah home on a cloud.

Noah Cappe hits the Big Butler Fair in Prospect, Pa., where he tears into the Conevore, filled to the brim with smoked brisket, pork and chicken. Then, Noah feels the fire with the Ragin' Cajun Hoagie before sampling a Fried Fruit Tart and Big Banana Pop. The folks at the San Mateo County Fair in California have a grand slam with the World Series Burger, then Noah gets wrapped up in a Chile Relleno Burrito and celebrates with Birthday Cake Popcorn Balls.

Noah Cappe's first stop is the Wayne County Fair in Richmond, Ind., where he takes a stroll with the Walking BBQ, feels the groove of the King with a Bacon PB&J Quesadilla, goes healthy-ish with a Deep Fried Salad, and chills out with an all-American ice cream sundae called the Burst of Freedom. Then, at the Lane County Fair in Eugene, Ore., Noah gets some golden gate goods with the Frisco Sandwich before feeling the heat of Jalapeno Popper Onion Rings and finishing off his day with some delectable Deep-Fried Coffee.

Noah Cappe cruises up the west coast, starting at the Columbia County Fair in St. Helens, Ore. First up is a traditional Indian fry bread stuffed with some non-traditional ingredients, then Noah dives into the coastal fusion of the Great Pacific Pita before he gets his paws on the Deep Fried Chili Dog. Finally, Noah erupts with happiness when he eats the Marionberry Volcano. Later, Noah visits the El Dorado County Fair in Placerville, Calif. where he's excited to meet the Rib Pop, taste new heights with Maui Wowies and chow down on the Banana S'more Crepe Cones!

Noah Cappe is hot on the trail of some otherworldly carnival eats at the UFO Festival in Roswell, N.M. From the Alien Egg to the Crashed UF-Dough, it's good eating for earthlings. Later, Noah heads to California's Orange County Fair where he tackles the massive Porky Leg and makes dreams come true with Deep Fried Pizza.

Noah Cappe heads to the San Diego County fair in California, for breakfast with a bang with French Toast Bacon Bombs. Then he saddles up with the Maui Cowboy Burger and finds fried food fusion in the Deep Fried Nachos Supreme. It's a trio of carnival twists on favorite foods at the La Porte County Fair in Indiana with the Port Belly Reuben, Deep Fried Lobster Mac & Cheese and Creampuff Jimmy's original Giant Cream Puffs.

Noah Cappe heads to the annual Rio Rancho Pork & Brew festival in New Mexico, where he samples a trio of meaty meals before ending the day devouring adorable Baby Cakes. Then it's up north to the Ionia Free Fair in Michigan, where the state's largest free fair leaves Noah with a lot of dough to spend enjoying The Tator Grenade and Churro S'mores.

Noah Cappe arrives in the California desert for a date with deliciousness at the Riverside County Fair and National Date Festival. After some hot and spicy treats like the Fire Fingers Kartwheel and the Sonoran Fire Dog, Noah's earned a cool Palm Date Shake. From there, he heads to the Pensacola Interstate Fair for some Flori-Bama fun. Noah digs into some Crabby Tots and the Love Me Tender pizza before meeting up with the Queen of Funnel Cakes for the ultimate fairground sweet.

Noah Cappe travels back in time at the Texas Renaissance Festival, where the medieval-inspired meals range from the Sir Francis Fry Dog to The Crown Jewel. Then it's over to Plant City, Fla., where Noah chows down on some berry delicious carnival treats at the Florida Strawberry Festival. Strawberries even make a surprise appearance in some savory treats like the Sweet Brisket Taco and the Spicy Strawberry Stack.

Noah Cappe heads to the Arkansas State Fair for the Arkansas Slamwich, the Stuffed Thanksgiving Taco and more; a savory funnel cake called the Chick 'N' Cake, deep-fried rice pudding and other delights.

Noah Cappe heads to New York for the Long Island Fun Fest and some Empire State eats. He can't resist a pizza covered in gooey penne alla vodka or a fancy Hamptons Dog, and he also tries the ultimate Italian-American combo, a Cannoli Calzone. Then Noah travels to Fort Pierce, Fla., for the St. Lucie County Fair, where he devours the savory and sweet Loaded Churro Fries. The Strawberry Cheeseshake and the Food Court Megastick send him home happy.

Noah Cappe starts off in Chippewa Falls, Wis., at the Northern Wisconsin State Fair. The Wisconsin woods are the inspiration for the loaded Campfire Burger, and the state's famous cheese curds make an appearance in the Hot Chick. Noah tries Spanish Queens, a unique deep-fried treat, and coffee gets a fresh take in the form of the Funnel-Latte. Then Noah's off to Indianapolis, where meat takes center stage at the Marion County Fair. The Pork Pickle Pizza is a new favorite, and the Deep-Fried Reuben transforms the classic sandwich into an easy-to-eat, must-have treat.

Noah Cappe heads to northern Indiana, where the Hoosiers in Valparaiso are doing things right at the Porter County Fair. The Super Ramen Dog combines two delicious foods Noah didn't know belonged together, the Elephant Ear Taco is a new take on a fairground favorite, and the Peanut Pop Shake has Noah all shook up. Then he heads north of the border to Brooklin, Ontario, for the Brooklin Spring Fair. He makes friends with the Secret Club, gets a taste from across the pond with London Calling and eats dessert in a whole new way with the Push Pop Cake.

Noah does a deep dive into a Loaded Oaxacan Tamale -- a traditional tamale loaded with fried chicharron and sumptuous sauces -- and scarfs down the Elote Dog -- a house made bacon-wrapped wiener loaded with Mexican street corn -- that twist fair food staples together in the most satisfying way. The fantastic food fusion doesn't stop there as he tries the Smash Burger Taco -- seasoned beef pressed into a tortilla and loaded with burger toppings -- and the Breakfast de Muertos -- a sweet and savory breakfast sandwich on a traditional Pain de Muertos bun. Later on, Noah visits Florida for the Florida State Fair in Tampa, where series veteran Mama Jane serves up a Cubano sandwich on a funnel cake, and for the Brevard Renaissance Fair in Melbourne for the sweet, crunchy and fired up Dragon's Breath Brûlée.

There's the Carne Asada Yakisoba, which brings Mexican and Japanese flavors together in the most tantalizing way, and the Southern Swai Mac Rolls, crispy egg rolls stuffed with catfish, mac and cheese, and collard greens. Before that, Noah heads to Florida's Space Coast for the Key Lime Pie Festival, where a pair of off-the-wall burgers will get him ready for a key lime pie ice cream sandwich! Finally, Noah's off to the Coastal Carolina Fair in South Carolina for a dough-nutty take on banana pudding.

Giddy up and tally ho! Host Noah Cappe is off to Rodeo Austin, one of Texas' premiere rodeo events! The vendors have to feed hundreds of thousands of hungry fairgoers, and their delectable midway meals do not disappoint. Noah stars the day off right with the Bacon Breakfast Fries before digging into the Surf and Turf-tato -- a steak and seafood loaded baked potato -- an Etouffee Parfait that layers sumptuous Cajun delights, and the Popcorn Frankendog -- a classic corn dog with an amped up popcorn-coated batter. Later, Noah heads to California for a pair of wildly different events! First up, the bright Balboa Park December Nights Festival in San Diego features Kenyan-inspired Rafikiz Fries and perfectly hued Pink Lady Dumplings. Then in Cathedral City, Noah hits up the Taste of Jalisco, a Mexican-inspired festival, where he samples the Sweet Potato Tornado -- a modern carnival classic.
